Ingredients

  • 3 to 4 pound boneless beef chuck roast (see note for other options)
  • 1 tablespoon garlic powder or granulated garlic
  • 2 teaspoons dried parsley
  • 2 teaspoons onion powder or granulated onion
  • 1 teaspoon dried dill weed
  • 1 teaspoon coarse salt
  • ¼ cup beef broth
  • ¼ cup liquid from jar of pepperoncini
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon beef bouillon paste (optional – see note)
  • 4 tablespoons butter, cut into pieces
  • 4 to 6 pepperoncini

Instructions

  1. Place the beef roast into the insert of a 6- or 8-quart slow cooker.
  2. In a small bowl, thoroughly combine the garlic powder, dried parsley, onion powder, dried dill weed, and coarse salt. Sprinkle this seasoning blend evenly over all sides of the beef roast.
  3. In a separate small bowl, whisk together the beef broth, the flavorful liquid from the jar of pepperoncini, cornstarch, soy sauce, Worcestershire sauce, and the optional beef bouillon paste (if you are using it for an extra flavor boost). Pour this liquid mixture over the beef in the slow cooker. Gently turn the beef once or twice to ensure it is evenly coated with the seasonings and liquid.
  4. Distribute the pieces of butter and the whole pepperoncini over the top of the beef roast.
