This particular recipe for Butterscotch PB Monster Cookie Bars takes inspiration from an older monster cookie bar recipe from my archives. I’ve fine-tuned a few ingredients and tweaked the mixing method to create an even more phenomenal version. The result is a bar that is perfectly chewy, wonderfully soft, and bursting with the iconic flavors that make monster cookies so beloved, but with a special butterscotch twist that elevates them to new heights.

The Unbeatable Combination: Butterscotch and Peanut Butter

I know what you might be thinking: “Butterscotch and peanut butter? Is that really a thing?” And my answer is a resounding YES! This combination might sound unconventional to some, but trust me, it’s a flavor match made in dessert heaven. The rich, salty notes of creamy peanut butter perfectly complement the sweet, caramel-like essence of butterscotch. They balance each other beautifully, creating a harmonious and utterly addictive taste experience.

If you’re hesitant about the butterscotch chips, let me assure you, they are a game-changer. While you certainly have the freedom to customize, I highly encourage you to embrace this delightful pairing. It’s an opportunity to expand your flavor horizons and discover a new favorite. The creamy peanut butter in the cookie dough, combined with both butterscotch and chocolate chips, creates a complex and deeply satisfying flavor profile that is hard to resist.

However, if you feel compelled to experiment, feel free to substitute the butterscotch chips with other mix-ins. You could go for extra chocolate chips for a double chocolate punch, introduce peanut butter chips for an even richer peanut butter flavor, or even a combination of all three! The beauty of these monster cookie bars is their versatility.

And for those truly looking to embark on a flavor adventure, consider adding shredded coconut! By swapping out about 1½ cups of the oats for shredded coconut, you can transform these into Butterscotch PB Coconut Monster Cookie Bars. If you’re a coconut enthusiast with a fondness for butterscotch, peanut butter, and chocolate, this mashup will be your ultimate dream dessert. I’ve personally tried this coconut variation, and I can confidently say it’s an experience that brings pure joy.

The Golden Rule of Baking: Don’t Overbake!

These monster cookie bars are renowned for their incredibly soft, chewy, and intensely peanut buttery texture. A significant secret to achieving this perfection lies in one crucial piece of advice: do not, under any circumstances, overbake them! I cannot stress this enough. Overbaking is the arch-nemesis of a perfectly moist and tender cookie bar.

Seriously, please, for the love of all things delicious, do not overbake these bars!

Thank you. Your future self (and everyone who gets to enjoy these bars) will be eternally grateful. Overbaked bars turn dry, crumbly, and sad, losing all their potential for chewy goodness. As an intentional “under-baker” for most of my desserts, I always recommend erring on the side of slightly underbaking. The residual heat of the pan will continue to cook the bars even after they come out of the oven, allowing them to set up beautifully while maintaining that desirable soft center.

So, how do you know when they’re just right? Keep a close eye on them. You want to pull the bars out of the oven when their edges are lightly golden and the center appears mostly set, but still quite soft. They will firm up as they cool to room temperature, transforming into the perfect consistency. Trust the process, and you’ll be rewarded with cookie bars that are nothing short of spectacular.

Storage and Freezing for Future Enjoyment

One of the many fantastic qualities of these butterscotch PB monster cookie bars is how incredibly well they freeze. This makes them an ideal candidate for meal prepping desserts or for having a delicious treat on hand for unexpected guests. I recently made a large batch of these, along with some brown butter salted caramel cookie bars, in advance of family visiting. After baking and cooling, I simply froze them in airtight freezer bags.

The convenience of pulling out perfectly preserved, ready-to-eat cookie bars from the freezer is truly unparalleled. It’s like having a secret stash of homemade goodness! Just remember to plan a little ahead and allow them some time to thaw at room temperature before serving, ensuring they regain their optimal texture and are easy on your guests’ teeth.

When stored in an airtight container at room temperature, these bars will stay fresh and delicious for 3-4 days. In the refrigerator, they can last up to a week. For longer storage, freezing is definitely the way to go. Simply wrap individual bars or small portions tightly in plastic wrap, then place them in a freezer-safe bag or container. They will keep well for up to 2-3 months.

Making Them Truly Gluten-Free: A Deeper Dive

This recipe is naturally quite friendly to gluten-free diets because it doesn’t call for any wheat flour. However, to ensure these cookie bars are *truly* gluten-free, it’s essential to be diligent about your ingredient choices. The two main areas to check are your oats and your chips.

Firstly, **Oats**: While oats are naturally gluten-free, they are often processed in facilities that also handle wheat, barley, and rye, leading to cross-contamination. Always look for oats that are specifically labeled “certified gluten-free.” This ensures they have been processed and handled in a way that minimizes exposure to gluten. Both quick oats and old-fashioned oats are available in certified gluten-free versions.

Secondly, **Chips (Butterscotch, Chocolate, Peanut Butter)**: Many brands of chips contain hidden gluten or are manufactured on shared lines. Always check the packaging for a clear “gluten-free” label. For butterscotch chips, for example, while Nestle brand typically contains gluten, brands like Guittard and Hershey often offer gluten-free butterscotch chips. When in doubt, contact the manufacturer or opt for brands known for their gluten-free commitment.

Taking these precautions will allow you to confidently enjoy these magnificent monster cookie bars, knowing they meet strict gluten-free standards without sacrificing any flavor or texture.

Ingredients

  • ½ cup
(113 g) salted butter, softened to room temperature
  • 1 cup
    (255 g) creamy peanut butter
  • cup
    (141 g) light brown sugar
  • cup
    (141 g) granulated sugar
  • 1 teaspoon
    baking soda
  • ¼ teaspoon
    salt
  • 2
    large eggs
  • 1 teaspoon
    vanilla extract
  • 1 ¼ cups
(125 g) quick oats (see note)
  • 1 ¼ cups
    (125 g) old-fashioned oats (see note)
  • 1 cup
    (170 g) chocolate chips
  • 1 cup
(170 g) butterscotch chips or peanut butter chips or more chocolate chips (see note)

Instructions

  1. Preheat the oven to 350 degrees F (175°C). Lightly grease a 9×13-inch baking pan or line it with foil and lightly grease the foil for easier cleanup. If using a glass pan, consider reducing the oven temperature to 325 degrees F (160°C).
  2. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, combine the softened butter, creamy peanut butter, light brown sugar, granulated sugar, baking soda, and salt. Beat until the mixture is light and fluffy, usually 1-2 minutes, scraping down the sides of the bowl as needed to ensure everything is well incorporated.
  3. Add the large eggs and vanilla extract to the mixture. Beat until everything is thoroughly combined and smooth. Next, add the quick oats, old-fashioned oats, chocolate chips, and butterscotch chips. Mix on low speed until all ingredients are evenly distributed throughout the dough.
  4. Evenly spread the prepared cookie dough into the bottom of your greased 9×13-inch pan. Bake for 20-25 minutes, or until the edges are lightly golden. Remember the key tip: do not overbake! The center will still look soft but will set as the bars cool. Allow the bars to cool completely in the pan before cutting them into squares. These bars freeze exceptionally well, making them perfect for future enjoyment!

Notes

Oats: For the best texture, I prefer a combination of quick oats and old-fashioned oats. However, you can use all quick oats or all old-fashioned oats, keeping in mind the texture of the finished bars might vary slightly. For a truly gluten-free recipe, ensure all oats are certified gluten-free.

Peanut Butter: This recipe was developed using creamy, standard peanut butter (such as Jif or Skippy). I have not tested it with natural peanut butter or alternative nut butters like cashew or almond butter, which may affect the texture and consistency of the bars.

Gluten-Free Adaptation: These cookie bars are inherently gluten-free as no wheat flour is used. However, to ensure they are completely gluten-free, it is crucial to verify that all ingredients, especially the oats and any chips (butterscotch, chocolate, etc.), are clearly labeled as gluten-free. For instance, some butterscotch chip brands (like Nestle) are not gluten-free, while others (like Guittard and Hershey’s) are. Always check product labels carefully.

Flavor Variations: Feel free to experiment with your choice of chips! Replace butterscotch chips with extra chocolate chips, peanut butter chips, or even white chocolate chips for a different flavor profile. For an adventurous twist, swap 1.5 cups of the oats for shredded coconut to create Butterscotch PB Coconut Monster Cookie Bars.
