Step Three: In a medium bowl beat your melted butter and both sugars for 2-3 minutes. You want the mixture to become creamy.

Step Four: Next add in the bananas and egg. Mashed bananas is key, we like to use a fork to break up the banana and mix with the wet ingredients.

Step Five: Then add in the vanilla and milk. Then slowly work in the dry ingredients. We do like to use an electric mixer for this bread to ensure the banana mixture is fully mixed.

Variations and Tips

Here are some changes and tips for success you can make to the best banana bread recipe. This is a peanut butter lover recipe!

  • Swap creamy peanut butter with chunky peanut butter.
  • Place a piece of parchment paper inside the loaf pan to make it easy to lift the quick bread out once the bread cools after being baked.
  • Cool your bread in the pan on a wire rack to hep cool all sides of the bread.
  • Stir in peanut butter cups that are chopped up, or top with the chopped candy instead of Reese’s Pieces.
  • Your center of the bread will take the longest to cook. Use a toothpick to stick in to see if it is baked through. You don’t want any wet batter on the toothpick.
  • If the top of the loaf of bread is browning too fast, cover with a tent of foil. This will make sure to not overbake the top of the bread.
  • Ripe bananas are a must or you won’t get the banana flavor you want.

Storing

We like to store this banana bread that is frosted in the fridge. We find the frosting and bread last longer when refrigerated. Just place in an airtight container and refrigerate for 4-7 days.

You can also freeze any leftover banana bread. Just cover in foil or place in a freezer container or freezer bag. Freeze for 3-4 months.

Peanut Butter

We used a creamy peanut butter but you can use a chunky peanut butter. Bananas – Your bananas needs to be brown spotted and fully ripe. Otherwise the banana will not have the flavor of banana. Frosting – The frosting is optional, you do not have to top the bread with frosting.
