Looking for ways to change up this cake mix whoopie pie recipe? Here are a few ways to change up the cookie to fit your needs.
Any cake mix flavor can be used to make these cookies. From a red velvet cake mix to a classic vanilla cake mix. Have fun and pick and choose your usual cake mix flavors.
For the filling you can use a homemade frosting of choice like a vanilla buttercream or opt to buy your usual flavor to spread on.
Place some sprinkles on a plate and roll your cookies in sprinkles on the frosting area to add a pop of color to the cookies for serving up.
Instead of frosting make these into carrot cake ice cream sandwich cookies. Just use vanilla ice cream as the filling instead of frosting.

Tips for Success
- Don’t overmix the batter for the cookies. It can make the cookies dense.
- Use a cookie scoop. This is important so you get evenly shaped cookies that are all the same size.
- Allow the cookies to cool completely before you add the frosting. The frosting will just melt if you add to a warm cookie.
- Don’t overbake the cookies. Make sure to remove once the cookies are fully baked. Stick a toothpick in the center and if the toothpick doesn’t have wet batter on the cookies it is baked.
Storing Cookies
Store the cookies in an airtight container at room temperature in a sealed container. Just make sure that the cookies are fully cooled before you place the cookies in the container.
Now if you use a frosting that needs to be refrigerated, then store the cookies in the fridge in a proper container.
Freezing: You can also freeze the cookies if you want. Place in a freezer bag or freezer container. Then freeze the cookies for 3-4 months. Once ready to eat, thaw on the counter at room temperature, or on the counter.

Practical notes
Should carrot cake cookies have raisins?Feel free to add raisins to the cake mix batter when you go to make cookies. We would add around 1/4 to 1/3 cup of raisins to the cookies. Feel free to add the raisins if you want, but they are not a must.
Can we make the cookies a day in advance? You can make these cookies a day in advance if you would like. We would recommend not making them more than 24 hours in advance. You will find that cookies will get dry each day.
What if we don’t want to make sandwich cookies? If you do not want to make the sandwich cookies you can make just plain carrot cake cookies and serve them without the frosting in the center. Just bake them as directed and skip making into sandwich cookies.
