Why Make This One-Pot Zucchini Pasta
This recipe has been a summer staple since my garden produced more zucchini than I could handle. It showcases how a few straightforward ingredients can yield a comforting, saucy pasta without fuss. Cook everything in a single pan for fast prep and easy cleanup—perfect for busy evenings.
Top reasons to try this one-pot zucchini pasta:
- Made in one pot for fewer dishes and quick cleanup.
- Shredded zucchini adds vegetables without overwhelming the flavor—shred on the small grater holes for the most discreet texture.
- Uses pantry-friendly ingredients you probably already keep on hand.
- Frozen shredded zucchini works well, so you can make this year-round.
- No need to fully thaw or drain fresh zucchini; its moisture helps create a saucy finish. If using frozen zucchini, you may want to drain a little before adding.

Important Ingredient Notes
- Small pasta: Choose small shapes like small shells, elbow macaroni, or ditalini so the pasta cooks evenly in the sauce. Twelve ounces is about three cups dry.
- Pasta sauce: A jarred marinara or tomato-based pasta sauce works well. If your jar is smaller than 28 ounces, add extra water or tomato to reach enough liquid for cooking the pasta.
- Milk: Adding milk gives a creamy texture that mellows the marinara. Use 1%, 2% or whole milk; unsweetened non-dairy milk should work if preferred.
- Dried herbs: Dried basil and oregano add depth. Stir in fresh basil at the end or use as a garnish for a bright finish.
- Shredded zucchini: No need to peel—trim the ends and shred on the small or large holes of a box grater. You’ll need about one 10–11 ounce zucchini (roughly 2 to 3 cups shredded).
- Parmesan: Freshly grated Parmesan melts best and gives the creamiest result. Serve extra at the table for grating over individual portions.
Bonus tip: If you use specialty pasta shapes or authentic Italian pasta that cooks more slowly than standard American shapes, allow extra cooking time and add liquid as needed while the pasta simmers.

Additional Notes
- Pasta texture: Different pasta brands and shapes require slightly different cooking times. Start checking for doneness a minute or two before the package time and add a little water if the pan becomes too thick.
- Prevent sticking: Because this recipe cooks the pasta in a mixture of sauce and milk, keep the heat at a gentle simmer and stir frequently to avoid sticking or scorching. Add small amounts of water as needed.
- Serving variations: The pasta is delicious as a meatless main. To serve with meatballs, bake or cook meatballs separately and stir them into the pasta at the end so they soak in the sauce.
This has become a favorite for quick summer dinners—saucy, comforting, and ready in about 30 minutes without heating the oven.
Leftovers thicken as they cool; add a splash of water or milk when reheating to bring back the saucy texture.

Easy One-Pot Saucy Zucchini Pasta
Ingredients
- 12 ounces small pasta (small shells, elbow macaroni, ditalini), about 3 cups dry
- 28-ounce jar pasta sauce (about 3 cups)
- 2 cups water
- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Pinch crushed red pepper (optional)
- 2 to 3 cups shredded zucchini (no need to peel), about one medium 10–11 ounce zucchini
- 1/2 cup freshly grated Parmesan cheese, plus extra for serving
Instructions
- In a deep skillet or wide saucepan, combine the pasta, pasta sauce, water, milk, salt, dried basil, dried oregano, and crushed red pepper if using.
- Bring the mixture to a gentle simmer over medium heat, stirring often. Maintain a gentle simmer—high heat can cause the pasta to stick or the milk to scorch.
- Continue simmering for about 8–9 minutes, stirring frequently. Check the pasta for doneness and add a splash of water if the mixture becomes too thick or starts to stick.
- Stir in the shredded zucchini and simmer for another 2–3 minutes, stirring often, until the pasta is tender and the zucchini is heated through.
- Remove the pan from the heat and stir in the freshly grated Parmesan. Taste and adjust seasoning with additional salt if needed.
- Serve warm with extra Parmesan on the side. The sauce will thicken as it cools, so thin with a little water or milk when reheating if desired.
- Optional: For a meatier meal, add cooked meatballs or browned sausage pieces at the end and stir to combine.
Notes
Pasta sauce: If you only have a smaller jar of sauce, add an extra 1/2 cup water or tomato sauce so there is enough liquid for the pasta to cook.
Substituting crushed tomatoes: You can use 28 ounces crushed tomatoes instead of jarred sauce. If so, consider doubling the dried herbs and adding 1 teaspoon brown sugar and a splash of soy sauce for balanced flavor.
Zucchini: No need to peel; trim the ends and shred on the small or large holes of a box grater depending on your texture preference.
