This updated chicken fajitas recipe is outstanding. Full of bold, smoky flavor, it’s simple to make at home and rivals restaurant versions.
I’ve used a favorite chicken fajita recipe for years, but this refreshed version is even better. It’s easier to prepare, and the seasoning penetrates both the chicken and vegetables for warm, smoky flavor throughout.

Why This Recipe Is New and Improved
Many readers love the earlier chicken fajita recipe I’ve shared for years. This new version builds on what worked and introduces refinements that yield more consistent, restaurant-quality fajitas you can easily make at home.
- Seasoning throughout: The spice blend is used both in the chicken marinade and on the vegetables so every bite is flavorful.
- Flexible cooking options: The recipe includes multiple methods for cooking the chicken — grill, oven, skillet, or air fryer — so it’s convenient year-round and adaptable to your equipment.
- Marinate whole pieces: Cooking the chicken whole before slicing keeps it juicier and more flavorful than seasoning after cutting into strips.

Ingredient Notes
- Seasonings: This recipe relies on common pantry spices: salt, chili powder, garlic powder, cumin, paprika, oregano, onion powder, black pepper, and a pinch of cayenne. Smoked paprika adds a rich, smoky depth.
- Fresh lime juice: Freshly squeezed lime brightens both the chicken and the vegetables; add a little more at the end if you want a pop of acidity.
- Chicken: Use boneless, skinless chicken breasts or thighs. Cooking times differ slightly by cut and method, and notes are provided below.
- Vegetables: Bell peppers and onions are classic; mushrooms are an optional addition. If you include mushrooms, sauté them first, plate them, then cook the onions and peppers and return the mushrooms to the pan at the end.
Serving suggestions: Warm corn or flour tortillas and top the fajitas with sour cream, guacamole, salsa, shredded cheese, chopped cilantro, and more fresh lime juice.

Quick weeknight meal: This is a favorite for busy evenings. The chicken marinates quickly and cooks in minutes, so once it’s ready the whole meal comes together fast. It’s also tasty enough for guests or a casual dinner party.
Stacked into a warm tortilla with peppers, onions, and plenty of toppings — especially guacamole — these fajitas are satisfying and full of flavor.

My Favorite Easy Chicken Fajitas
Ingredients
Seasoning / Marinade
- 1 ½ teaspoons table salt
- 1 ½ teaspoons chili powder
- 1 teaspoon garlic powder
- ¾ teaspoon ground cumin
- ¾ teaspoon sweet or smoked paprika
- ¾ teaspoon dried oregano
- ½ teaspoon onion powder
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon liquid smoke (optional)
Chicken + Veggies
- 1½ to 2 pounds boneless, skinless chicken breasts or thighs
- 3 medium bell peppers, cored, seeded, and sliced into strips
- 1 large white or yellow onion, sliced into half-moons
- 1 tablespoon olive oil (for sautéing)
For Serving
- Corn or flour tortillas
- Shredded cheese
- Sour cream
- Guacamole
- Salsa
Instructions
-
Make the seasoning: In a small bowl, whisk together the salt, chili powder, garlic powder, cumin, paprika, oregano, onion powder, black pepper, and cayenne until combined.
-
Reserve 1 ½ teaspoons of the seasoning for the vegetables, then mix the remaining seasoning with 2 tablespoons olive oil, 2 tablespoons lime juice, and the liquid smoke (if using) to form the marinade.
-
Marinate the chicken: If pieces are thick, pound to even thickness. Place chicken in a dish or a large resealable bag, pour the marinade over the chicken, toss to coat, cover or seal, and refrigerate for at least 2 hours or up to 12 hours.
-
Cook the chicken: Choose your preferred method:
- Grill: Preheat grill to medium-high and cook breasts 4–6 minutes per side or thighs 7–8 minutes per side.
- Air Fryer: Preheat to 375–380°F. Cook breasts 12–15 minutes or thighs 18–20 minutes.
- Oven: Preheat to 400°F. Roast on a foil-lined sheet for the same times per side as the grill.
- Skillet: Heat 2 tablespoons olive oil in a skillet until hot and rippling. Cook breasts 4–6 minutes per side or thighs 7–8 minutes per side.
-
Tent the cooked chicken with foil and let it rest 5–10 minutes before slicing.
-
Sauté the vegetables: In a 12-inch skillet, heat 1 tablespoon olive oil until hot. Add the onions and peppers, sprinkle with the reserved seasoning, and cook, stirring occasionally, until tender and slightly caramelized to your taste.
-
Slice the chicken into thin strips and add it to the skillet with the vegetables. Toss to combine and heat through. Adjust salt and pepper to taste.
-
Serve the chicken and vegetables in warm tortillas with your favorite toppings.
Notes
Pounding the chicken: Place each breast in a sturdy freezer bag and gently pound with the flat side of a meat mallet to an even thickness. This step is optional but helps the chicken cook evenly and slice uniformly.
Adding mushrooms: If you include mushrooms, sauté them first until browned, remove them to a plate, then cook the onions and peppers. Return the mushrooms to the skillet with the chicken at the end and heat through.
