  • ½ cup fresh lime juice, from about 3-4 regular limes or 20 Key limes

  • ¾ cup shredded coconut, toasted (optional)

  1. Preheat your oven to 325 degrees F, and adjust an oven rack to the middle position. Line an 8-inch square baking pan with aluminum foil, ensuring two opposing edges hang over the sides by at least an inch or so to create “handles” for easy removal. Grease the foil thoroughly with cooking spray.
  2. For the crust, combine the animal crackers, brown sugar, and a pinch of salt. Process them together in a blender or food processor until fine, even crumbs are formed. Drizzle the melted butter over these crumbs and pulse again briefly to incorporate it evenly (alternatively, stir together in a bowl with a fork until moist crumbs form). Sprinkle this mixture into your prepared pan and press the crumbs firmly into an even layer across the bottom.
