Practical notes
What is chili fixin Rotel?
This Rotel is our secret weapon. It has a chili seasoning base and adds tons of flavor to this Rotel cheese dip recipe.u003cbru003eNow, if you can’t find the u003ca href=u0022 target=u0022_blanku0022 rel=u0022noreferrer noopeneru0022u003eChili Fixin’su003c/au003eu003cimg width=u00220u0022 height=u00220u0022 src=u0022 alt=u0022u0022u003e you can use regular Rotel and then add in a teaspoon of chili powder, and it will offer a similar flavor to the Rotel dip.
What size of Instant Pot did we use for Rotel Dip?
We used our u003ca href=u0022 target=u0022_blanku0022 rel=u0022noreferrer noopeneru0022u003e6 quart Instant Potu003c/au003eu003cimg width=u00220u0022 height=u00220u0022 src=u0022 alt=u0022u0022u003e for this dip. Now, you could use a 3 quart and we think you still would have room.u003cbru003eAnd if you wanted to double this recipe in the 6 or 8 quart you sure could, you would have room.
Can we use sausage instead of ground beef in Velveeta queso dip?
Go right ahead and swap for ground sausage or even chorizo when it comes to making Velveeta queso dip. Just ensure you cook the meat fully then mix in with the other ingredients to cook.
Are you supposed to drain Rotel?
You do not drain the Rotel when you use it. The juice inside is full of flavor and will help make the dish creamy. Now some recipes you will find might state to drain, in that case then drain off the liquid.
Can you freeze Rotel dip?
With the dairy in the dip, you will find freezing doesn’t work well. The Rotel dip will separate a bit as it thaws.
Can we leave the meat out of Rotel Queso Dip?
Yes, leave the ground beef out if you would like. It will still be a flavorful dip without the meat in it. Just skip the saute setting since you don’t need to cook the meat.u003cbru003eI have also used sausage for this as well and it tasted good. We just prefer beef in ours.

Ingredients
Makes 15 servings
Tools Needed
- Instant Pot
- Ground Meat Chopper
Queso Ingredients
- 1 lb hamburger
- 1 tablespoon oil
- 1 can Rotel Chili Fixin
- 2 tablespoons Taco Seasoning, I used Ortega original
- 32 oz of diced Velveeta cheese
Equipment
- Pampered Chef Meat Chopper
- Silicone Sealing Ring for Instant Pot Accessories
- Instant Pot
Method
- Turn your pressure cooker to saute and cook your beef with the oil. Make sure to scrape the bottom good to prevent sticking so you don’t get a burn notice when you cook.
- Once the beef is no longer pink and fully cooked, add in your seasoning and Rotel and mix well.
- Toss the diced Velveeta cheese on top, do not stir. The Velveeta needs to stay on top, or it will give burn notice.
- Place lid on the Instant Pot and turn the valve to sealing. Pressure cook for 5 minutes, with a quick-release once completed.
- Stir the mixture until cheese is melted, and then serve immediately!
Kitchen notes
Ninja Foodi Queso Dip
You will follow the same directions as the Instant Pot, just use the pressure cooker lid and not the crisping lid.
- If you can’t find Chili Fixin’ Rotel use regular Rotel (diced tomatoes with green chilis) and add in a tablespoon of chili powder.
- Velveeta cheese is a must for this recipe. You can’t swap it out.
- If you want leave the ground beef out and do a meatless queso dip.
- You can use homemade taco seasoning to replace of store-bought
