Practical notes

Sirloin, tri-tip, flat iron, top loin, and more are all great cuts. The key is to cut against the grain to help ensure you meat is tender.

Which oil is not suitable for stir-frying?

Olive oil is not recommended to be used when stir frying. You will find it can’t take the higher heat without smoking and burning.

How much oil should we use for stir-fry?

1-2 tablespoons is all you need for frying up a stir fry. The idea is to create a crust on the meat, then to break down and sear the vegetables. You don’t need a ton more than that.

How do you fry beef so it’s tender?

Slice your beef against the grain, and then coat in a thin layer of cornstarch. Let it sit for 10 minutes, then fry it up. The cornstarch will help ensure it is tender.
