A delectable Instant Pot BBQ pork taco, generously filled with tender pulled pork, vibrant pickled onions, and drizzled with a rich BBQ sauce, all nestled in a soft tortilla.

This Instant Pot BBQ Pork Tacos recipe shares a subtle kinship with some beloved sweet pork dishes, but it distinguishes itself with a more straightforward approach and a distinctly delicious BBQ flavor. It strikes the perfect balance of smoky depth, savory sweetness, and a delightful tanginess that will have everyone reaching for seconds. The beauty of this recipe lies in its simplicity; it relies on a strategic blend of common pantry spices to build a robust flavor foundation that truly shines.

Crafting the Perfect Spice Blend for Irresistible Flavor

The secret to achieving such a vibrant and complex flavor profile in these BBQ pork tacos starts with a thoughtfully curated spice mixture. This blend is designed to complement the rich taste of pork while infusing it with those signature BBQ notes we all love. Using readily available pantry staples, you’ll create a seasoning that is both potent and balanced. Here’s what you’ll need:

  • **Dried Oregano:** Adds an earthy, slightly peppery Mediterranean warmth.
  • **Paprika (Smoked Paprika Recommended):** Essential for that deep, smoky character. Smoked paprika, in particular, enhances the BBQ essence significantly.
  • **Garlic Powder:** Provides a foundational aromatic kick, delivering a mellow garlic flavor without the sharpness of fresh garlic.
  • **Cumin:** Lends a warm, earthy, and slightly spicy note, a classic component in many savory dishes and tacos.
  • **Chili Powder:** Offers a mild, balanced heat and a beautiful reddish hue, deepening the overall flavor.
  • **Salt & Pepper:** Fundamental for seasoning, enhancing all other flavors and bringing them into harmony. We recommend coarse kosher salt for better control.

This simple yet powerful combination of spices ensures that every shred of pork is infused with a delicious, savory aroma and taste, setting the stage for an unforgettable taco experience. You’ll mix these together, reserving a small portion to boost the flavor at the very end of cooking, adding that final touch of freshness and depth.

Choosing the Best Pork Roast for Tender Pulled Pork

The success of perfectly tender pulled pork for your Instant Pot BBQ tacos heavily relies on selecting the right cut of meat. While many cuts can be used, some are inherently better suited for the low-and-slow (or high-pressure-fast) cooking method required to achieve that desirable fall-apart texture. My personal favorite, and highly recommended for this recipe, is a **sirloin pork roast**. I often find convenient 4-packs of these at warehouse clubs like Costco.

Why a sirloin roast? It strikes a wonderful balance. Sirloin roasts are typically leaner than a traditional pork shoulder (also known as a pork butt or Boston butt), which means less excess fat to trim. Despite being leaner, they consistently cook up incredibly tender and moist in the Instant Pot, unlike a pork loin roast, which can often dry out if not cooked precisely. The sirloin’s muscle structure breaks down beautifully under pressure, yielding succulent shreds of pork.

If a sirloin pork roast isn’t readily available in your local grocery store, don’t despair! A **boneless pork shoulder** or **butt roast** makes an excellent alternative. These cuts are known for their marbling and connective tissue, which render down during cooking to create exceptionally rich and tender meat. They are a classic choice for pulled pork recipes for a good reason. You might find them slightly fattier, but the extra fat contributes significantly to the flavor and moisture.

Once you have your chosen pork roast, the preparation is simple but crucial for maximum flavor penetration. You’ll cut the roast into several large, manageable pieces – typically 3-4 inch chunks. This increases the surface area for seasoning and allows for more even cooking. Then, generously rub all sides of these pork pieces with your homemade spice blend. This ensures every bite is bursting with flavor, from the outside in.

Large chunks of pork roast generously rubbed with a savory spice blend, ready for cooking in the Instant Pot to create flavorful BBQ pork tacos.

After seasoning, these pork chunks are nestled into your pressure cooker with a flavorful liquid base. This liquid is a simple yet effective combination of chicken broth, root beer, and BBQ sauce. The root beer might seem like an unusual addition, but it plays a crucial role. Its unique blend of sweetness and subtle spice helps tenderize the pork while imparting a distinct, delicious flavor that complements the BBQ sauce beautifully. While you could experiment with other cola-type sodas, root beer has a proven track record in pulled pork recipes for a reason!

The Perfect BBQ Sauce: Store-Bought or Homemade

No BBQ pork taco would be complete without a fantastic BBQ sauce. This tangy, sweet, and sometimes spicy condiment is what brings all the flavors together, coating the tender pork in a luscious, irresistible glaze. While nothing quite rivals the satisfaction of a homemade BBQ sauce – especially my favorite homemade version – we understand that life can be busy. Between work, family, and daily chaos, whipping up a batch of homemade sauce might not always be feasible. And that’s perfectly okay!

The good news is that there are many excellent store-bought BBQ sauces that can deliver incredible flavor. When time is of the essence, my go-to brands are **Sweet Baby Ray’s** and **Kinder’s**. Both offer a consistent quality and a delicious balance of sweet, smoky, and tangy notes that are perfect for this recipe. Sweet Baby Ray’s is widely available and loved for its rich, molasses-based sweetness. Kinder’s offers a range of sauces, many with a slightly more savory or robust profile that also works wonderfully here. Ultimately, the best BBQ sauce is the one you enjoy most!

With the seasoned pork and flavorful liquid mixture in place, your Instant Pot takes over. Cook on high pressure for approximately 50-60 minutes, depending on the thickness of your pork chunks. The goal is truly fall-apart tender meat – so tender that a fork effortlessly shreds it. The pressure cooker works its magic, breaking down tough fibers and infusing the pork with all those wonderful flavors.

Once cooked, you’ll find the pot contains a good amount of liquid. While this liquid is flavorful, you don’t want the pulled pork swimming in it. Carefully discard all but 1-2 cups of the cooking liquid, leaving just enough to keep the pork incredibly moist and flavorful. This is also the perfect time to add a final flourish: stir in the reserved tablespoon of seasoning mixture and an extra half cup of BBQ sauce. This “finishing” touch brightens the flavors, adding a fresh zing and ensuring the pork is perfectly coated and seasoned, ready for your tacos.

Beyond the Tortilla: Versatile Ways to Enjoy BBQ Pork

While these Instant Pot BBQ Pork Tacos are undeniably a star, the tender, super tasty BBQ pork itself is incredibly versatile and can be enjoyed in a myriad of ways. Don’t feel confined to just tortillas; this flavorful pulled pork is a fantastic foundation for many other exciting meals. Here are a few creative ideas to spark your culinary imagination:

  • **Classic BBQ Pulled Pork Sandwiches:** Pile the warm, saucy pork high on toasted buns, perhaps with a dollop of coleslaw for a delightful crunch.
  • **Loaded Baked Potatoes or Sweet Potatoes:** Spoon the BBQ pork over fluffy baked potatoes or sweet potatoes, then add your favorite cheese, sour cream, and chives for a hearty and satisfying meal.
  • **BBQ Pork Salads:** For a lighter option, serve the pork atop a bed of crisp greens with corn, black beans, tomatoes, and a drizzle of ranch or a zesty vinaigrette. It’s particularly delicious over cilantro lime rice bowls with fresh avocado.
  • **Nachos or Quesadillas:** Layer the BBQ pork with cheese and other taco fixings on tortilla chips for epic nachos, or press it into quesadillas for a quick and cheesy bite.
  • **Stuffed Bell Peppers:** Hollow out bell peppers, fill them with BBQ pork, and bake until tender for a colorful and nutritious dish.

However you choose to serve it, **our absolute favorite way to enjoy this pork is indeed in warm tortillas, loaded with a vibrant array of taco toppings.** This might not be a super authentic taco in the traditional sense, but the incredible BBQ flavor combined with the tender pork and endless topping possibilities creates a taste experience that is simply amazing. Think beyond the ordinary and truly make these tacos your own!

Building Your Dream Taco: The Essential Toppings

The beauty of tacos lies in their customizability, and these BBQ pork tacos are no exception. The rich, savory pork provides the perfect canvas for a symphony of textures and flavors from your chosen toppings. Here are some of our top picks to elevate your taco experience:

  • **Fresh Tomatoes:** Diced tomatoes add a burst of juicy freshness and a touch of acidity.
  • **Cilantro:** Freshly chopped cilantro offers a bright, herbaceous note that perfectly cuts through the richness of the pork.
  • **Avocados or Guacamole:** Creamy avocado slices or a generous dollop of guacamole add a luxurious texture and healthy fats.
  • **Quick-Pickled Onions:** My personal favorite! These tangy, vibrant pink onions provide a fantastic acidic counterpoint and a delightful crunch that balances the sweetness of the BBQ sauce.
  • **Shredded Cheese:** A sprinkle of Monterey Jack, cheddar, or a Mexican blend adds a familiar comfort and creamy texture.
  • **Sour Cream or Mexican Crema:** A cooling dollop helps to mellow any spice and adds a rich, tangy creaminess.
  • **Extra BBQ Sauce:** Don’t forget an extra drizzle of BBQ sauce right over the top of your assembled taco. This final touch pulls all the flavors together and gives a unique, zesty flair.
  • **Jalapeños:** For those who enjoy a bit of heat, sliced fresh or pickled jalapeños add a fiery kick.
  • **Corn Salsa:** A vibrant corn salsa with red onion, bell peppers, and lime juice can add sweetness and crunch.

Mixing and matching these toppings allows you to create a personalized taco masterpiece every time. Each bite promises a delightful combination of tender pork, crisp vegetables, creamy textures, and that unmistakable BBQ flavor. If you’re looking to shake up your regular taco night, discover a new quick meal for your Instant Pot, or simply need a show-stopping dinner to share with friends, these Instant Pot BBQ pork tacos are an absolute winner!

Smart Meal Prep: Freeze for Future Feasts

One of the many advantages of this Instant Pot BBQ Pork Tacos recipe is its incredible meal-prep potential. The cooked BBQ pork freezes exceptionally well, making it a fantastic candidate for batch cooking. Imagine having deliciously tender, pre-cooked BBQ pork ready to go for those evenings when time, motivation, and your dinner-saving angels have seemingly vanished into thin air. By investing a little time upfront, you can ensure a fast, flavorful, and homemade meal is always within reach.

A hand holds a perfectly crafted Instant Pot BBQ pork taco, generously filled with tender pulled pork, pickled onions, and a drizzle of BBQ sauce, highlighting its delicious appeal.

To freeze, simply allow the shredded BBQ pork to cool completely, then transfer it to airtight freezer-safe containers or heavy-duty freezer bags. If using bags, press out as much air as possible before sealing to prevent freezer burn. The pork can be stored in the freezer for up to 3 months. When you’re ready to enjoy, thaw the pork overnight in the refrigerator, then reheat gently on the stovetop or in the microwave until warmed through. A splash of extra broth or BBQ sauce can help keep it moist during reheating. This simple trick ensures that even on your busiest days, a delicious, homemade meal is just minutes away.

Ingredients

Seasoning Mixture:

  • 2 teaspoon dried oregano
  • 2 teaspoons garlic powder
  • 2 teaspoons salt, I use coarse, kosher salt
  • 1 teaspoon cumin
  • 1 teaspoon paprika or smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon black pepper

Pork:

  • 3 to 5 pound pork roast
  • ½ cup chicken broth
  • 1 cup root beer
  • 1 ½ cups BBQ sauce, divided (you’ll use 1 cup at first and 1/2 cup later)

Extras:

  • Tortillas
  • Toppings, sour cream, cheese, pickled onions, cilantro, tomatoes, BBQ sauce, etc

Instructions

  1. Combine all the seasoning ingredients in a small bowl. Measure out 1 tablespoon and set aside for later use.
  2. Cut the pork roast into large 3- or 4-inch chunks. Generously season the pork pieces on all sides with the remaining spice mix from the bowl.
  3. Pour the chicken broth, root beer, and 1 cup of the BBQ sauce into the insert of a 6-quart electric pressure cooker. Whisk these liquids together to combine. Carefully nestle the seasoned pork chunks into the liquid. Secure the lid, ensure the valve is set to the sealing position, and cook on high pressure for 50-55 minutes.
  4. Allow the pressure to naturally release for 10-15 minutes (or let it fully natural release for maximum tenderness). Then, carefully quick release any remaining pressure.
  5. At this stage, the pork will be very tender, and there will be a significant amount of cooking liquid. If you prefer the pork not to be swimming, carefully ladle out some of the liquid and discard it. Aim to leave at least 1-2 cups of liquid in the pot to keep the pork moist.
  6. Using two forks, shred the cooked pork directly in the pot. Stir in the previously reserved 1 tablespoon of seasoning mixture and the additional 1/2 cup of BBQ sauce. Stir well to combine all the flavors and heat through until warmed.
  7. Serve the delicious BBQ pork in warm tortillas with your desired array of toppings. Enjoy!

Notes

Slow Cooker Variation: For a slow cooker version of these delicious BBQ pork tacos, follow the initial recipe instructions for preparing and seasoning the pork. Place the seasoned pork, along with the same amount of chicken broth, root beer, and 1 cup of BBQ sauce, into a 6- or 8-quart slow cooker. Cook on low for 8-10 hours, or until the pork is incredibly tender and easily shredded. Once cooked, discard excess liquid as needed, shred the pork with two forks, and stir in the reserved seasoning mix and the remaining 1/2 cup of BBQ sauce. Heat through before serving.

BBQ Sauce Recommendations: We recommend using either Kinder’s or Sweet Baby Ray’s for a high-quality store-bought BBQ sauce. If you have the time, our favorite homemade BBQ sauce recipe is an excellent choice.

Root Beer Substitution: Root beer adds a unique sweetness and depth, but you can likely substitute it with another favorite cola-type soda if preferred. (Note: this hasn’t been personally tested with other sodas.)

Make it Spicy: If you enjoy a bit more heat, feel free to increase the amount of chili powder in the seasoning mixture. For an extra kick, consider adding a pinch or two of cayenne pepper to the blend.

Nutrition Facts Information: The nutrition facts provided for this recipe are calculated based solely on the pork mixture and its seasonings. They do not include the tortillas or any toppings, as these are typically added according to individual preference and can vary widely.
