  • ¼ teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • Pinch of ground cloves
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 large egg yolks
  • cup heavy cream
  • ½ cup milk or half-and-half

Instructions

  1. Roll out the pie crust (for a detailed guide, refer to this step-by-step post) and gently place it into a 9-inch pie plate. Trim the edges and flute them decoratively. Cover the pie crust and refrigerate for at least one hour, or up to a day, to help prevent shrinkage during baking.
  2. Preheat your oven to 425 degrees F (220 degrees C). Line the chilled pie crust with foil, then fill it completely with dried beans or pie weights (wheat berries can also be used). Bake the pie crust for 15 minutes. Carefully remove the foil and weights. Continue to bake for another 10 minutes, or until the bottom of the crust no longer appears raw. Remove the crust from the oven and set aside while you prepare the filling.
  3. In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, salt, cinnamon, nutmeg, ginger, and cloves until all ingredients are thoroughly combined. Add the large eggs, egg yolks, heavy cream, and milk (or half-and-half). Whisk the mixture until it is smooth and uniform. Be careful not to overmix, as excessive whisking can lead to cracks in the finished pie.
  4. Carefully place the partially baked pie shell on a baking sheet. Pour the prepared pumpkin filling into the warm pie shell. The baking sheet will make it easier to transfer the pie to and from the oven and catch any potential spills.
