Sauce:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 ounces baby bella mushrooms, stems removed and discarded, mushrooms halved
  • 1 medium shallot, finely minced
  • 2 cloves garlic, finely minced
  • 3 tablespoons all-purpose flour
  • 3 cups low-sodium beef broth or stock
  • 1 cup half-and-half
  • 3 tablespoons chopped fresh parsley

Cauliflower Mash:

  • 2 heads cauliflower florets
  • 2 tablespoons butter
  • 2 tablespoons sour cream
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. For the pork: Begin by slicing the pork tenderloins into ½-inch thick pieces. Place each slice between two pieces of plastic wrap or inside a thick resealable Ziploc bag. Using a meat mallet or the bottom of a small saucepan, lightly pound each piece until it is approximately ¼-inch thick. This ensures quick and even cooking.

  2. In a shallow dish, combine the 1 cup of all-purpose flour with 1 teaspoon of salt and ½ teaspoon of black pepper. Dredge each pounded pork cutlet thoroughly in this seasoned flour mixture, ensuring both sides are evenly coated. In a large, 12-inch skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat until the fat is hot and shimmering, indicating it’s ready for searing.

  3. Carefully add the flour-dredged pork cutlets to the hot skillet in a single layer. Avoid overcrowding the pan; you may need to cook the pork in batches to ensure proper browning. Cook for 3-4 minutes on each side, until the pork is golden brown and just cooked through (an instant-read thermometer should register 145 degrees F). Transfer the cooked pork to a plate and cover it lightly with a lid or aluminum foil to keep it warm while you cook the remaining batches. Add a little extra butter and olive oil to the skillet if it becomes too dry between batches.

  4. For the sauce: Once all the pork has been cooked and removed from the skillet, return the skillet to medium heat. Add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Add the halved baby bella mushrooms, finely minced shallot, and finely minced garlic to the skillet. Cook, stirring frequently, for about 6-8 minutes, or until the mushrooms have softened and started to brown, releasing their rich, earthy aroma.

  5. Stir in the 3 tablespoons of all-purpose flour, cooking for 1-2 minutes while stirring constantly. The flour should absorb the pan drippings and take on a light brown color, and the mixture should sizzle gently. Gradually pour in the low-sodium beef broth or stock, about ½ cup at a time, whisking constantly to prevent lumps. Make sure to scrape up any browned bits from the bottom of the pan to incorporate all the delicious flavor. Bring the mixture to a gentle simmer. Next, stir in the 1 cup of half-and-half. Continue to simmer for 5-6 minutes, or until the sauce has thickened slightly to your desired consistency.

  6. To serve, arrange the crispy pork cutlets on a large platter or individual plates. Pour the rich mushroom gravy generously over the top of the pork. Serve the smothered pork immediately over a bed of creamy mashed potatoes or, for a lighter option, our delicious cauliflower mash.

  7. For the cauliflower mash: First, clean and trim the large stems off the heads of cauliflower. Cut the florets into uniform pieces. Bring a large pot of water to a boil and add the cauliflower florets. Boil until they are very tender, which should take approximately 8-10 minutes. Drain the cauliflower thoroughly and spread the pieces on several layers of paper towels. Pat them very dry to remove as much moisture as possible (work quickly to keep the cauliflower warm for blending).

    Transfer the cooked, dried cauliflower to a food processor, blender, or use a large bowl with an immersion blender. Add the 2 tablespoons of butter, 2 tablespoons of sour cream, and ½ cup of freshly grated Parmesan cheese. Season with salt and pepper to taste (start with ½ teaspoon of each and adjust as needed). Process or blend until the mixture is thick and exceptionally smooth, resembling traditional mashed potatoes.
