  • ½ cup toasted chopped pecans (optional)

Cream Cheese Filling:

  • 8 ounces (227 g) cream cheese, light or regular, softened
  • ¼ teaspoon vanilla extract
  • ¼ cup (53 g) granulated sugar
  • 1 large egg

Frosting:

  • 4 ounces (113 g) cream cheese, softened
  • 2 tablespoons butter, softened
  • ½ teaspoon vanilla extract
  • 2 tablespoons heavy cream
  • 1 tablespoon sour cream
  • 2 cups (228 g) powdered sugar

  • For the cream cheese filling, in a separate medium bowl, using an electric handheld mixer (or the paddle attachment of a stand mixer), beat together the softened cream cheese, vanilla extract, granulated sugar, and egg until the mixture is completely smooth and well-combined.
  • Pour half of the carrot cake batter evenly into the bottom of the prepared bundt pan. Spoon or carefully pour the cream cheese mixture evenly across the top of the carrot cake layer. Finish by dolloping the remaining carrot cake batter over the cream cheese layer. It’s okay if you can see some of the cream cheese layer peeking through; the carrot cake batter may not cover it entirely. Remember, no swirling is needed.
  • Bake the cake for 45-60 minutes, or until the top lightly springs back to the touch and a wooden skewer or toothpick inserted into the cake portion (avoiding the cream cheese areas if possible) comes out clean.
  • Remove the cake from the oven and let it cool in the bundt pan on a wire rack for 5-10 minutes. Then, carefully invert the cake onto a serving plate or cooling rack to cool completely before frosting.
  • For the frosting, in a medium bowl, using an electric handheld mixer (or the paddle attachment of a stand mixer), whip together the softened cream cheese, softened butter, and vanilla extract until smooth and well-combined. Add the heavy cream, sour cream, and powdered sugar, and continue to mix until the frosting is light and fluffy.
  • Once the bundt cake has cooled completely to room temperature, spread the cream cheese frosting generously over the top of the cake. If desired, sprinkle chopped, toasted pecans or other garnishes over the frosting for an extra touch.
