This Caramel Apple Bundt Cake is truly a celebration of autumn, capturing every beloved flavor and aroma of the season in one magnificent dessert. From its perfectly spiced, moist crumb to the luscious cream cheese swirl and double drizzle of caramel and glaze, it’s an experience that defines cozy fall evenings. What makes it even more appealing? It’s surprisingly simple to prepare and, like a fine wine, actually tastes even better on the second day, making it an ideal make-ahead treat for any occasion.

A Symphony of Fall Flavors in Every Slice

Imagine a cake that perfectly balances warmth, spice, and fruitiness with a creamy, decadent richness. Our Caramel Apple Bundt Cake delivers just that. Each slice reveals a tender, spiced apple cake, generously studded with bits of juicy, tart apples that burst with flavor. Woven through this delightful base are ribbons of sweetened cream cheese, adding a delightful tang and an extra layer of moisture that elevates the cake from merely good to absolutely sublime.

But the indulgence doesn’t stop there. Once baked to golden perfection and cooled, the cake is generously adorned with two glorious toppings. First, a creamy, buttery glaze seeps into the cake, adding another layer of sweetness and moisture. Then, a rich, homemade caramel sauce cascades over the entire bundt, creating an eye-catching finish and an explosion of caramel goodness with every bite. The combination of these textures and flavors – the soft cake, the tender apple pieces, the smooth cream cheese, and the sticky glazes – creates an unforgettable dessert experience that will have everyone asking for the recipe.

Ingredients

Cake:

  • 3 cups (426 g) all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 3 medium apples, for about 3 cups chopped (firm, tart apples like Honeycrisp or Granny Smith work best)
  • 1 tablespoon lemon juice
  • 3 tablespoons dark brown sugar
  • 2 teaspoons vanilla, divided
  • 1 ¼ cups vegetable or canola oil
  • 2 cups (424 g) granulated sugar
  • 3 large eggs

Cream Cheese Layer:

  • 8 ounces (227 g) cream cheese, room temperature
  • ⅓ cup (71 g) granulated sugar
  • ½ teaspoon vanilla
  • 1 large egg

Glaze:

  • 2 tablespoons (28 g) butter
  • 2 tablespoons brown sugar
  • 2 tablespoons white sugar
  • 2 tablespoons heavy cream
  • ½ to 1 tsp vanilla

Caramel Sauce:

  • 4 tablespoons (57 g) butter
  • 1 cup (212 g) firmly packed light brown sugar
  • ½ cup half-and-half or whipping cream
  • Pinch of salt
  • 1 tablespoon vanilla

Instructions

  1. Generously grease and flour a 9 or 10-inch bundt pan, ensuring every crevice is coated to prevent sticking. Set aside. Preheat your oven to 350 degrees F (175 C).
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt until thoroughly combined. Set this dry mixture aside. Peel, core, and dice approximately 3 cups of apples. Toss the diced apples immediately with 1 tablespoon of lemon juice to prevent browning. Add the dark brown sugar and 1 teaspoon of vanilla to the apples and toss again to combine all the flavors. Set this apple mixture aside.
  3. Using a handheld electric mixer or a stand mixer with the paddle attachment, blend the oil, granulated sugar, and the remaining 1 teaspoon of vanilla until well mixed and lightened in color. Add the eggs one at a time, beating well after each addition until fully incorporated. Gradually stir in the reserved dry ingredients into the wet mixture until just incorporated. Be careful not to overmix the batter, as this can lead to a tough cake. If any excess liquid has accumulated from the apples, drain it off, then gently fold the apple mixture into the batter. Pour the thick batter evenly into your prepared bundt pan.
  4. For the cream cheese layer, in a separate medium bowl, beat the room temperature cream cheese until it is completely smooth and free of lumps. Add the ⅓ cup of granulated sugar, ½ teaspoon of vanilla, and the large egg, then beat on medium speed until the mixture is creamy and smooth, about 1-2 minutes.
  5. Using a spoon or a butter knife, create a circular trench in the center of the cake batter in the bundt pan, about 1-inch deep. Gently scoop the excess batter to either side, forming a ring. Spoon the cream cheese mixture into this trench, trying to keep it in a distinct ring in the center of the cake, surrounded by cake batter. Once the cream cheese mixture is in place, use a butter knife to gently swirl it into the surrounding cake batter, creating beautiful ribbons.
  6. Bake the cake for 1 hour and 15 minutes. Baking times can vary based on your oven and pan, so start checking for doneness around the 60-minute mark. The cake is ready when a toothpick inserted into the center comes out with only a few moist crumbs attached, or clean.
  7. While the cake begins to cool, prepare the creamy glaze. In a small saucepan over medium-high heat, combine the butter, brown sugar, white sugar, and heavy cream. Bring the mixture to a boil and cook for one minute, stirring constantly to prevent scorching. Remove from heat and stir in the vanilla. Carefully pour this warm glaze over the cake while it is still in the bundt pan. Allow the cake to cool completely in the pan before attempting to remove it. Once cooled, invert the cake onto a serving plate. Store any leftover cake covered in the refrigerator for up to 2 days. Serve chilled or at room temperature, with an additional drizzle of caramel sauce over each piece.
  8. To make the caramel sauce, combine the butter, firmly packed light brown sugar, half-and-half (or whipping cream), and a pinch of salt in a saucepan over medium-low heat. Stir until the butter is melted and the sugar is dissolved. Bring the mixture to a gentle simmer and cook for 5 to 7 minutes, whisking gently and continuously until the sauce thickens slightly. Remove from heat, stir in the vanilla, and continue to whisk for another minute to thicken further. Pour the sauce into a heatproof jar or container. Refrigerate until cold, or use slightly warm (but not hot). If the caramel sauce hardens in the fridge, simply warm it gently in the microwave or a small saucepan until it reaches a pourable consistency before drizzling over the cake.

Baker’s Notes

Make Ahead: This cake truly shines on its second day, as the flavors have more time to meld and deepen. Feel free to bake it a day in advance! Once completely cooled and glazed, store it covered tightly in the refrigerator for up to three days. Bring to room temperature before serving for the best texture, or enjoy it chilled—it’s delicious either way.

Caramel Sauce: For ultimate convenience, the homemade caramel sauce can also be prepared ahead of time. Make a batch and refrigerate it in an airtight container for up to a week. When ready to use, gently warm it until it reaches a smooth, pourable consistency. This versatile sauce is also fantastic over ice cream, pancakes, or even coffee.

Apple Selection: For the best flavor and texture, choose firm, slightly tart apples that hold their shape well during baking, such as Honeycrisp, Granny Smith, Fuji, or Braeburn. Avoid overly soft or mealy apple varieties.
