- 1 teaspoon vanilla extract
- 3 ¼ cups (462 g) whole wheat flour (see note)
- 1 ¼ teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon baking soda
- ⅔ cup milk
- 1 ¼ cups buttermilk
Instructions
- In a large bowl, combine the wheat bran and wheat germ. Pour in the boiling water and stir to combine. The mixture may look crumbly, and that’s perfectly fine if it doesn’t appear entirely soaked. Let it rest for 10 minutes to allow the bran and germ to absorb the liquid.
- Stir in the melted coconut oil (or butter), sugar (if using), molasses, honey, eggs, and vanilla extract into the bran mixture. In a separate bowl, whisk together the whole wheat flour, baking powder, salt, and baking soda. In a third bowl or measuring cup, whisk together the milk and buttermilk.
- To the wet bran mixture, add 1/3 of the dry flour ingredients and mix gently until just combined. Next, stir in 1/2 of the milk mixture. Add another 1/3 of the dry ingredients, stirring just until combined. Incorporate the remaining half of the milk and mix well. Finally, add the last of the dry ingredients and mix carefully until just combined. Be careful not to overmix the batter, as this can result in dense muffins.
