Enchiladas, much like lasagna, offer an exciting canvas of culinary possibilities. Their versatility allows for endless creative variations, making them a perennial favorite for food enthusiasts everywhere. This particular stacked enchilada recipe reimagines the classic, transforming a flat dish into a magnificent, towering creation that's as impressive to look at as it is delicious to eat. It’s an innovative twist on my absolute favorite green chile chicken enchiladas, but presented in an elegant, pie-like form that’s perfect for slicing and serving.

Why You'll Love This Green Chile Chicken Enchilada Stack
This Green Chile Chicken Enchilada Stack is more than just a meal; it's a celebration of comfort food. Its clever layered design means you use fewer tortillas than traditional rolled enchiladas, yet achieve a truly satisfying depth of flavor and texture. The homemade green chile sauce is remarkably simple to prepare, bursting with vibrant, savory notes that perfectly complement the tender shredded chicken and melted cheese. Each slice delivers a harmonious blend of creamy, spicy, and cheesy goodness, making it an instant crowd-pleaser.
Garnished with fresh, diced tomatoes, creamy avocados, bright cilantro, and zesty lime wedges, every bite of this enchilada stack is a major flavor explosion. If you have pre-cooked chicken on hand, this dish can be ready to bake in just slightly over 30 minutes, fitting perfectly into a busy weeknight schedule. It’s a testament to how simple ingredients can come together to create something truly extraordinary.

Our family can attest to the irresistible appeal of this dish – we consistently devour every last morsel, leaving no leftovers! There's something inherently appealing about a meal that comes together quickly and disappears just as fast. It’s even more amusing when it's baked in the same pan often reserved for dessert. Whatever works to get delicious food on the table, right?
The Art of the Stack: Easier Than You Think
One of the brilliant aspects of this Green Chile Chicken Enchilada Stack is its simplified assembly. Gone are the days of individually rolling tortillas, a process that can sometimes be time-consuming and messy. Instead, you create beautiful layers of flavor, much like building a savory cake. This method not only speeds up prep time but also ensures every single portion gets a perfect balance of all the delicious components. The layers create a delightful textural contrast: soft tortillas, rich sauce, juicy chicken, and gooey melted cheese, all baked together into a cohesive, comforting masterpiece.
The beauty of this recipe also lies in its adaptability. You can easily adjust the spice level of the green chile sauce to suit your preference, from mild to extra hot. Freshly shredded chicken is ideal, but leftover rotisserie chicken or even canned chicken can work in a pinch, making this an excellent recipe for using up ingredients you already have. This versatility makes the Green Chile Chicken Enchilada Stack a true weeknight hero.

What to Serve With This Green Chile Chicken Enchilada Stack
While this enchilada stack is a complete meal in itself, pairing it with a few fresh sides can elevate your dining experience. Here are some fantastic options:
- Mexican Tomato and Corn Salad: A light, refreshing salad with a hint of lime and cilantro offers a bright contrast to the rich enchiladas. Alternatively, a simple steamed vegetable like broccoli or green beans can add a fresh element.
- Shrapnel Dip with Baked Tortilla Chips: For an extra touch of Tex-Mex goodness, this savory dip alongside crispy, baked tortilla chips makes a perfect appetizer or side.
- Fresh, Seasonal Fruit: A bowl of mixed berries, sliced mango, or melon can provide a sweet and healthy counterbalance.
- Cilantro Lime Rice: A simple side of fluffy rice infused with cilantro and lime juice perfectly complements the Mexican flavors.
- Black Beans: A classic and easy side, black beans (either seasoned or plain) add fiber and protein.
Tips for Success with Your Enchilada Stack
To ensure your Green Chile Chicken Enchilada Stack turns out perfectly every time, consider these helpful tips:
- Pre-Cooked Chicken is Key: Having your shredded chicken ready before you start assembling makes this recipe incredibly quick. You can boil, bake, or slow-cook chicken breasts or thighs ahead of time and shred them.
- Quality Tortillas: Use fresh, pliable tortillas. If they seem a bit stiff, warm them slightly in a dry skillet or microwave to prevent cracking during assembly. Both white and whole wheat tortillas work wonderfully.
- Don't Over-Sauce Each Layer: While you want ample sauce, avoid drenching each layer. A generous spread is enough to keep the stack moist and flavorful without making it soggy.
- Shred Your Own Cheese: Freshly shredded cheddar and Monterey Jack cheese melt more smoothly and taste better than pre-shredded varieties, which often contain anti-caking agents.
- Allow Resting Time: Don't skip the 10-minute resting period after baking. This allows the stack to set, making it much easier to slice into neat, pie-shaped wedges.
- Springform Pan for Presentation: A springform pan is ideal for this recipe as it allows for easy removal and beautiful presentation. If you don't have one, a deep-sided round or square baking dish (at least 2 inches high) can work, though you may need to cut tortillas to fit.

Ingredients
Sauce:
- 2 tablespoons butter
- ½ cup chopped onion, about 1/2 medium onion
- 2 tablespoons flour
- ⅓ cup chicken broth
- ¼ cup milk
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 (7-ounce) can green chile enchilada sauce (see note)
- ½ cup sour cream, light or regular
For Stacking:
- 5 (9 or 10-inch) white or whole wheat tortillas
- 2-3 cups cooked shredded chicken
- 1 cup medium or sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
For Serving:
- Chopped tomatoes
- Diced avocados
- Chopped cilantro
- Lime wedges
Instructions
-
Preheat the oven to 400 degrees F (200 degrees C).
-
For the sauce, in a large nonstick skillet, melt the butter over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion softens and starts to turn translucent, about 3-4 minutes. Sprinkle the flour over the onions and stir well to combine. Cook for 1 minute, continuing to stir. Slowly whisk in the chicken broth and milk. As you whisk and the mixture heats, the flour will smoothly incorporate, and the sauce will begin to thicken.
-
Continue to cook over medium heat until the mixture is bubbling gently and has thickened to your desired consistency, typically about 4-5 minutes. Remove the skillet from the heat and stir in the canned green chile enchilada sauce, sour cream, salt, and pepper until everything is well combined and smooth.
-
To assemble the enchilada stack, lightly grease a 9- or 10-inch springform pan (choose the size that best fits your tortillas). The assembly process is as follows: place one tortilla on the bottom, spread a layer of sauce, then a layer of chicken, and finally a layer of shredded cheese. Repeat this sequence for a total of four layers. For the final, fifth layer, place the last tortilla on top, cover it with the remaining sauce, and sprinkle with the remaining cheese. (Essentially, it's five layers of ingredients, with the very top layer getting only sauce and cheese, no chicken).
-
Bake the enchilada stack uncovered in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
-
Once baked, let the enchilada stack rest for 10 minutes before serving. This resting period allows the layers to set, making it much easier to cut into neat, pie-shaped wedges. Garnish generously with chopped tomatoes, diced avocado, fresh cilantro, and lime wedges, if desired, for an extra burst of flavor and freshness.
Notes
Servings: The recipe is designed to yield 6 generous servings. However, in our family of seven (five kids and two adults), we found ourselves with no leftovers, so it’s quite popular! If you are serving 6 adults with hearty appetites, consider making two stacks or adding a few extra layers of ingredients to accommodate.
Pan Alternatives: If a springform pan isn't available, you can absolutely make this recipe in an 8- or 9-inch square or round cake pan. Ensure the sides of your chosen pan are at least 2 inches high (or more) to contain the stack. For a square pan, you may need to trim or cut your tortillas to fit the shape, or simply layer them with slight overlaps.
Homemade Enchilada Sauce: While canned sauce works great for convenience, for an even fresher and more personalized flavor, you can easily make your own green enchilada sauce. Find my favorite homemade recipe here.
