Ingredients

  • 1-2 zucchinis, about 26 ounces total, ends trimmed and cut into large chunks
  • ½ cup tahini (see note below)
  • 2 cloves garlic, peeled
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon coarse kosher salt
  • Pinch of chili powder

Instructions

  1. Steam the zucchini chunks in the microwave or in a steamer basket on the stovetop until the zucchini is translucent and tender. This usually takes about 3-4 minutes in the microwave or 5-7 minutes on the stovetop. It’s crucial not to overcook them to avoid a mushy texture.
  2. Once steamed, immediately pour the zucchini into a colander and drain very well. You can even press gently with the back of a spoon to extract excess water. This step is key to preventing watery hummus and ensuring a creamy consistency.
  3. Add the drained zucchini and all the other ingredients (tahini, garlic, olive oil, fresh lemon juice, ground cumin, coarse kosher salt, and chili powder) to the bowl of a food processor. While a food processor is recommended for the smoothest results, a high-speed blender would also work well.
  4. Blend until the desired consistency is reached. We prefer it fairly smooth, but you can adjust based on your preference. Scrape down the sides of the bowl as needed to ensure all ingredients are thoroughly incorporated. Taste and adjust seasonings if necessary, adding more salt, lemon juice, or cumin to your liking.
  5. Serve at room temperature or chilled with your favorite sliced vegetables, crispy pita chips, or pretzels. Store any leftovers in an airtight container in the refrigerator for up to 3-5 days.
