The Star Players: Key Ingredients for Hot Cocoa Cookies

Let’s break down the ingredients that make these cookies so special:

  • Butter: I consistently use salted butter, and the recipe’s salt measurement is calibrated accordingly. If you opt for unsalted butter, remember to add an extra 1/2 teaspoon of salt to the recipe.
  • Granulated Sugar & Brown Sugar: The brown sugar is essential for achieving that characteristic chewy texture. Ensure you pack the brown sugar firmly into your measuring cup for accuracy.
  • Eggs: For this recipe, use cold eggs straight from the refrigerator. Room temperature eggs might cause the dough to spread excessively during baking.
  • All-Purpose Flour: I typically use unbleached all-purpose flour.
  • Cocoa Powder: The 1/4 cup of cocoa powder intensifies the chocolate flavor and contributes to the dough’s structure, preventing excessive spreading. Do not omit this ingredient! I prefer natural, unsweetened cocoa powder for this recipe.
  • Hot Cocoa Mix: This recipe calls for dry hot cocoa mix. I recommend using a mix without added marshmallows for better control over the marshmallow content. My top choice is Ghirardelli Premium Hot Cocoa. I’ve also had great results with Nestle hot cocoa mix, although the resulting cookies are slightly sweeter and have a milder chocolate flavor compared to those made with Ghirardelli.
  • Mini Marshmallow Bits: A crucial ingredient! Do NOT substitute regular mini marshmallows, as they will melt and spread across the baking sheet. Look for the dehydrated mini marshmallow bits specifically designed for hot chocolate. They’re often found in the hot chocolate aisle. I always keep a bulk supply on hand, as they’re also fantastic in this granola and these s’mores cookies.

A Quick Note on Dry Hot Cocoa Mix: 1 cup of hot cocoa mix equals FOUR 1.5-ounce packets, approximately SIX .96-ounce packets, or around EIGHT .71-ounce packets.

Essential Tips for Perfect Hot Cocoa Cookies

I pride myself on sharing recipes that are genuinely worthwhile, even if they call for a few specialized ingredients. These Hot Cocoa Cookies absolutely fit that bill – they’re worth every bit of effort!

  • Choose a High-Quality Hot Chocolate Mix: Select a hot chocolate mix that you truly enjoy the flavor of, as it will significantly impact the final taste of the cookies.
  • Don’t Skip the Mini Marshmallow Bits: Trust me, once you experience these cookies (and the amazing s’mores granola and s’mores chocolate chip cookies), you’ll always want to have them on hand.
  • Experiment with Hot Cocoa Flavors: Consider using mint-flavored hot cocoa mix and adding a touch of peppermint extract to the dough for a festive twist. The possibilities are endless!

➡️➡️ I advise against using sugar-free hot cocoa mix, as it can negatively affect the flavor and consistency of the dough. While you can try using hot cocoa mix with marshmallows already added, keep in mind that it may not provide the same quantity of marshmallows as specified in the recipe.

Time to Bake: Let’s Make These Cookies!

The week I spent perfecting this cookie recipe, I received several random texts from people saying something along the lines of, “Hey, I heard about the chocolate cookies you made – can I have the recipe?”

Apparently, my kids went to school and church and enthusiastically promoted these cookies to everyone they encountered. This is especially amusing because, despite the abundance of cookies I bake (which my kids happily consume), they have never raved about a new cookie recipe this much – ever!

And I don’t blame them! These Hot Cocoa Cookies are truly among the most delectable cookies I’ve ever baked! Their texture is perfect – thick, soft, and wonderfully chewy. The chocolate flavor is intense, with that unmistakable hint of hot chocolate. Enjoy every bite!

Notes

Flour: If not using a scale to weigh ingredients, fluff the flour really well before scooping in the cup and leveling off with a straight edge.
