Why You’ll Love This Healthy Egg Roll Skillet

A Healthier Spin on a Classic

Traditional egg rolls, while delicious, are often deep-fried and can be quite heavy. This skillet meal offers all the savory goodness without the excess oil. By utilizing lean ground meat such as turkey or chicken, and packing it with a generous double portion of vegetables, you get a meal that’s both satisfying and genuinely good for you. You can even load it with more veggies to boost the nutritional value further!

Incredibly Easy & Quick

This recipe truly lives up to its “quick and easy” title. Designed as a one-skillet wonder, it streamlines your cooking process and significantly cuts down on cleanup time. With a total preparation and cook time of just 30 minutes, it’s the perfect solution for those hectic weeknights when you need a delicious and nutritious meal on the table fast. Using a bag of pre-shredded coleslaw mix simplifies the process even more, making it accessible for even the busiest home cooks.

Explosive Flavor Profile

Despite its simplicity, the flavors in this egg roll skillet are anything but basic. The combination of aromatic ginger and garlic, savory soy sauce, and rich oyster sauce creates a balanced and incredibly addictive taste. Each bite delivers a harmonious blend of sweet, salty, and umami notes that will tantalize your taste buds. It’s a sophisticated flavor profile achieved with minimal effort.

Master Your Meal: Customizing Your Egg Roll Skillet

One of the best aspects of this simple egg roll skillet meal is its incredible adaptability. There are numerous variables you can play around with to tailor it to your preferences or whatever ingredients you have on hand. While I’ve incorporated my favorite flavor components from a classic egg roll recipe, feel free to get creative!

Protein Power-Ups

  • Lean Ground Meats: The recipe calls for lean ground turkey or chicken, which are excellent choices for a lighter meal. They cook quickly and absorb flavors beautifully.
  • Other Options: Don’t limit yourself! Ground pork or even lean ground beef can be used for a richer flavor profile. For a plant-based alternative, crumbled firm tofu or tempeh makes an excellent substitute, providing a similar texture and soaking up all the delicious sauces.

Boost Your Veggies

While a bag of pre-shredded coleslaw mix makes this recipe incredibly convenient, you can easily shred a head of cabbage and grate some carrots yourself. But why stop there? This dish is a fantastic canvas for adding more vegetables, making it even healthier and more colorful:

  • Bell Peppers: Sliced bell peppers (any color) add sweetness and crunch.
  • Mushrooms: Sliced button or shiitake mushrooms introduce an earthy umami depth.
  • Broccoli or Cauliflower Rice: Finely chopped broccoli florets or cauliflower rice can be mixed in to bulk up the dish and add nutrients.
  • Snow Peas or Snap Peas: These can be added towards the end for a fresh, crisp texture.
  • Bok Choy: Sliced bok choy wilts down nicely and adds a subtle sweetness.
  • Water Chestnuts: For an extra layer of crunch, add sliced water chestnuts.

Adding these vegetables along with the onions will create a hearty and wholesome meal bursting with flavor and texture.

Sauce Savvy: Flavor Variations

The sauce is crucial to the authentic egg roll flavor. Oyster sauce provides a unique depth of umami and subtle sweetness. If you don’t have oyster sauce on hand or prefer an alternative:

  • Extra Soy Sauce: Increase the amount of soy sauce for added saltiness and umami.
  • Hoisin Sauce: Hoisin sauce is a sweet and savory alternative that works wonderfully.
  • Mild BBQ Sauce: A mild BBQ sauce with a flavor profile you enjoy can add a surprising and delicious twist.
  • Fish Sauce: For a different kind of umami and a hint of salinity, a dash of fish sauce can be used, but use sparingly as it’s potent.

Experiment with these options to find your perfect flavor balance!

Serving Suggestions & The Perfect Crunch Factor

This “no-frills” skillet meal truly elevates from simple to spectacular with just a few thoughtful additions:

The Essential Crunch Factor

Adding a crispy element on top is non-negotiable for that authentic egg roll experience and a delightful textural contrast. Consider these options:

  • Crispy Chow Mein Noodles: A classic choice, offering a satisfying crunch.
  • Fried Wonton Strips: These are usually available in the Asian section of grocery stores and provide a similar crispiness.
  • Toasted Nuts: For a healthier crunch, sprinkle chopped peanuts, cashews, or even slivered almonds. Toasting them briefly enhances their flavor.
  • Toasted Sesame Seeds: A light sprinkle can add both flavor and a subtle textural interest.

Tangy Drizzles for Extra Punch

A tangy, flavorful sauce drizzled over the top provides the perfect finishing touch, complementing the mild flavors of the egg roll mixture. Different family members often have their favorites:

  • Sweet and Sour Sauce: A universally loved option that adds a bright, tangy sweetness.
  • Sweet Thai Chili Sauce: For those who enjoy a little heat with their sweetness, this sauce is incredibly addictive and readily available.
  • Sriracha Mayo: A creamy, spicy kick for an extra layer of flavor.
  • Lime Wedges: A squeeze of fresh lime juice can brighten the entire dish.

A little of these strong-flavored sauces goes a long way, but they undoubtedly add something special to the humble combination of ground meat and vegetables.

Making it a Complete Meal

To make this egg roll skillet meal even heartier and more substantial, consider serving it alongside:

  • Rice: Hot, fluffy brown rice or white rice is a classic pairing that absorbs the delicious sauces. For a low-carb option, serve it over cauliflower rice.
  • Naan: We often enjoy piling the egg roll mixture into shallow bowls and serving it with warm naan bread (store-bought or homemade) for scooping. Its soft, chewy texture is a wonderful contrast to the skillet’s contents.
  • Side Salad: A simple green salad with a light vinaigrette can add freshness.
  • Steamed Edamame: A quick and healthy side that pairs well with Asian flavors.

With this fantastic skillet meal, dinner is literally 30 minutes or less away. It’s incredibly satisfying, easy to make, and packed with flavor and nutrition. I sincerely hope you and your family love it as much as we do!

And remember, if you manage to stash away any leftovers, may they remain undisturbed until you are ready to enjoy every last delicious bite. Happy cooking!

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow or white onion, diced (about 1 cup)
  • 3 cloves garlic, finely minced
  • 1 tablespoon finely chopped or grated fresh ginger, I usually use ginger paste – (see note)
  • 1 ½ to 2 pounds lean ground turkey or chicken
  • 4 large eggs, lightly whisked
  • 1 (14-ounce) package coleslaw mix, or about 5 cups shredded cabbage/carrots
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon soy sauce
  • 2 tablespoons oyster sauce (see note)
  • Chopped fresh cilantro, for serving
  • Crispy chow mein noodles or fried wontons, for serving
  • Sweet and sour sauce or sweet Thai chili sauce, for serving
  • Hot, cooked rice, for serving (optional)

Instructions

  1. In a large 12-inch nonstick skillet, heat the olive oil over medium heat until hot and shimmering. Add the diced onions and cook for 2-3 minutes until they begin to soften. Stir in the minced garlic and fresh ginger, and cook for another minute, stirring constantly until fragrant.
  2. Add the lean ground meat (turkey or chicken) to the skillet. Cook, breaking the meat into small pieces with a spatula, until it is no longer pink and is fully cooked through. Carefully drain any excess grease from the pan.
  3. Over medium heat, push the cooked meat mixture to the edges of the pan, creating a clear space in the center. Pour the lightly whisked eggs into the center of the pan. Sprinkle with a small pinch of salt. Allow the eggs to cook undisturbed until they begin to set on the bottom, then stir until they are scrambled. Mix the scrambled eggs thoroughly with the cooked meat. Add the coleslaw mix and cook, stirring frequently, for 2-3 minutes until the cabbage wilts slightly and becomes tender-crisp (cook longer if you prefer softer cabbage).
  4. Stir in the toasted sesame oil, soy sauce, and oyster sauce. Continue to cook for 1-2 minutes, allowing the flavors to meld. Taste the mixture and add additional salt, pepper, or soy sauce if needed, adjusting to your preference. Sprinkle fresh cilantro generously over the top before serving. Serve the egg roll skillet immediately over hot, cooked rice (if desired) and drizzle with sweet and sour sauce or sweet Thai chili sauce. Garnish with crispy chow mein noodles or fried wontons for that essential crunch.

Notes

Nutrition Facts: The nutrition facts for this recipe were calculated based solely on the turkey and cabbage mixture. They do not include the “for serving” ingredients such as rice, naan, sauces, or crispy toppings, as these are added based on personal preference and can vary widely.

Ginger: Ginger paste is a fantastic and convenient ingredient to have on hand for quick meals! You can typically find it in the produce section of most grocery stores, usually near the fresh herbs. When a recipe calls for fresh ginger, you can use an equal amount of ginger paste. Alternatively, using fresh ginger is simple: buy a knob of fresh ginger, cut it into 1-inch pieces, and store them in a freezer-safe bag. When you need ginger for a recipe, just grab a small piece from the freezer and grate it on the small holes of a box grater or a rasp grater. No need to peel it first!

Additions: Feel free to unleash your creativity by adding a variety of other vegetables to this skillet meal! It would be incredibly delicious with additions like sliced bell peppers, zucchini, broccoli florets, snap peas, or a myriad of other quick-cooking vegetables. Incorporate them when you add the onions for a more robust and nutrient-rich dish.

Oyster Sauce Alternatives: While oyster sauce adds a wonderful, complex dimension of flavor to this dish, if it’s not available or you prefer not to use it, there are excellent substitutes. You can try adding a bit more soy sauce for enhanced savoriness, or opt for hoisin sauce, which offers a similar sweet and savory profile. Even a mild BBQ sauce that you enjoy the flavor of can introduce an interesting and complementary twist.
